The Farmer's Market Bounty
Butter lettuce |
Medium sized Zucchini |
Basil |
Zucchini flowers

Soft and tender. They can be used fresh |
or broiled for 10 min to give a little crispy cover |
Torn butter lettuce |
Add diced cucumber and celery |
Add broiled zucchini and grated Swiss cheese |
Buttermilk Basil Dressing
1 cup basil leaves, 1 cup yogurt, 1/2 cup mayo, 4 pieces of garlic, 1-2 chilies, juice from half a lemon |
Saute the garlic and chilies to take off the edge |
Grind all of above |
Buttermilk Basil dressing Add dressing to salad on your plate |
The Bread and Cheese
Swiss cheese which was smoked and very much like Gouda |
Pumpernickel raisin bread |
Corn meal chili crusted zucchini flowers
Zucchini flowers |
2 eggs to dip the flowers in |
Corn meal, ancho chili powder, chipotle chili powder and salt |
Zucchini flowers |
Dip flowers in eggs and then corn meal and chili powder mix |
Saute both sides util crisp |
Squeeze lemon juice on top and decorate with cilantro |
Serve with fresh berries and salad |
And with a smoky, strong Swiss cheese along with quince paste, to be layered on a slice of crunchy savory-sweet pumpernickel raisin bread. |
