An evening with Butterfish

An evening with Butterfish, enticing summer to be here sooner.

After a classic terrible day at work my friend Butterfish and I sat down to do some serious bitching and cooking. Butterfish; an entertainer, host and cook par excellence was inspired by a beautiful northwestern sunset and her deep desire for summer to be here. I dont know how in the middle of winter she managed to find kiwi and mangoes to make a oooh so refreshing salsa. A generous squeeze of orange juice and extra cilantro made the salsa tangy.

Fresh Atlantic salmon was marinated in olive oil, soy sauce and honey and grilled in a grilling pan to make the geometric parallel lines in the salmon. I thought I smelt burning coal or was it the wine getting to me!

As we tucked into the salmon,salsa and brown rice I swear I saw the cherry man, sunsets at nine pm and the lighthouse at Discovery park all at the same time. A movie montage of summer exploded in my mind and the minor discomforts of life was soon forgotten.

  1. Lavanya, I'm a very simple eater, but this actually sounds like something I would try, sounds yummy!! I'm glad the minor discomforts of life were soon forgotten, you deserve such happiness.
