Food to heal


After a probably the worst work week in recorded history; I am sure I now know what a Roman gladiator felt when he faced the lion in the eye, I needed food that reminded me of a kinder, gentler life.

What does one cook to reclaim sanity and feel wholesome again. I chose a warm combination of winter vegetables slow cooked and added a couple at a time to boiling broth. I love color in the grocery basket and hence the swiss chard pancakes. The Pot-au-feu hugged me and made me feel safe with buttery pieces of carrots and potatoes and the aromatic hint of Shitake and button mushrooms and the tangy herbal zing of pesto coulis. Tangy because the pesto coulis I make is a little different, with garlic, ginger, soy sauce, shallots, and last but not the least walnuts.  The swiss chard pancakes were crisp but had enough green to make Popeye happy.
